Best Tagliatelle Recipe – How to Make Tagliatelle

Introduction:

Tagliatelle, a delicious and classic Italian pasta, is a quintessential part of the Italian culinary landscape. It is an elegant and versatile noodle that can be made with various sauces and ingredients. In this article, we’ll outline the best tagliatelle recipe and guide you through the process of making it from scratch for a true taste of Italy.

Ingredients:

For the Pasta:

– 2 cups (250g) all-purpose flour

– 3 large eggs

For the Sauce:

– 2 tablespoons olive oil

– 1 small onion, finely chopped

– 2 garlic cloves, minced

– 1 cup (250ml) crushed tomatoes

– ½ cup (125ml) heavy cream

– 1 teaspoon sugar

– Salt and pepper to taste

– Fresh basil leaves for garnish

Instructions:

1. Making the Tagliatelle

a. Create a mound of flour on a clean surface or in a large mixing bowl. Create a well in the center of the flour.

b. Crack the eggs into the well. Use a fork to gradually whisk the eggs, incorporating the inner edges of the flour into the egg mixture as you go.

c. Continue mixing until dough starts to form. Knead by hand until it becomes smooth and elastic – about 10 minutes.

d. Wrap dough with plastic wrap and let it rest for 30 minutes.

e. After resting, roll out dough as thin as possible using a rolling pin, or use a pasta machine if available.

f. Dust both sides of the dough with additional flour to prevent sticking.

g. Fold dough into layers and use a sharp knife to cut thin strips about a quarter-inch wide for tagliatelle noodles.

h. Unfold strips and let them rest on a well-floured surface.

2. Cooking the Tagliatelle

a. Bring a pot of salted water to a boil.

b. Gently drop in the fresh tagliatelle and cook for 2-3 minutes until al dente.

c. Drain and set aside, reserving ½ cup of the pasta cooking water.

3. Preparing the Sauce

a. In a large skillet, heat olive oil over medium heat.

b. Add chopped onion and garlic, cooking until softened and fragrant – about 5 minutes.

c. Stir in crushed tomatoes, heavy cream, and sugar. Simmer sauce for about 15 minutes, stirring occasionally.

d. Season with salt and pepper as desired.

4. Putting it all Together

a. Add cooked tagliatelle to the sauce in the skillet. Toss to ensure pasta is evenly coated with the sauce.

b. If the sauce is too thick, add reserved pasta water one tablespoon at a time until desired consistency is reached.

c. Serve with fresh basil leaves as garnish and enjoy your delicious homemade tagliatelle!
