Easy December Recipes – What to Make for Dinner in December 2021

As the days grow shorter and the temperatures drop, December brings with it a unique culinary atmosphere. Cozy and warm dishes become the stars of our dinner tables. In this article, we will explore some easy and delicious December recipes that you can prepare for your friends and family this year. From comforting soups to festive vegetarian dishes, there’s something here for everyone to enjoy.

1. Creamy Butternut Squash Soup

A soothing bowl of butternut squash soup is perfect for chilly evenings. Roast the butternut squash until tender, then blend it with sautéed onions, garlic, and a touch of cream for a velvety consistency. Add a pinch of nutmeg for extra warmth.

2. One-Pot Chicken and Rice Casserole

This hearty dish is ideal for those busy December days. Combine chicken thighs, vegetables, rice, and seasonings in a large pot or Dutch oven. Cook until the chicken is juicy and the rice is tender, making sure all ingredients are thoroughly cooked through.

Roast at 400°F for 12-15 minutes until the fish is cooked through and flaky.

7. Pork Tenderloin with Cranberry Sauce

Celebrate December flavors with this pork tenderloin recipe that incorporates sweet-tart cranberries. Marinate the pork tenderloin in a mixture of garlic, rosemary, and oil, then sear it in a hot pan to lock in flavor. Finish by roasting it in the oven until fully cooked. In the meantime, prepare a simple cranberry sauce by simmering fresh cranberries with sugar and orange juice until thickened.
