Best Lobster Bisque Recipe – How To Make Lobster Bisque

Introduction:

Lobster bisque is a rich, creamy soup made from lobster stock and laced with delicious flavors from lobster meat. This classic French delicacy is not only elegant but also incredibly delicious and perfect for special occasions or a cozy weeknight meal. In this article, we will discuss the best lobster bisque recipe that will guide you on how to make an exquisite lobster bisque at home.

Ingredients:

– 2 live lobsters, each about 1 1/2 pounds

– 2 tablespoons olive oil

– 1 onion, finely chopped

– 1 carrot, finely chopped

– 2 celery stalks, finely chopped

– 3 garlic cloves, minced

– 1/4 cup tomato paste

– 4 cups fish stock or water

– 1 cup dry white wine

– 1 bay leaf

– A few sprigs of fresh thyme

– 1 cup heavy cream

– Salt and freshly ground black pepper, to taste

– A pinch of cayenne pepper (optional)

– Chopped fresh chives or parsley for garnish

Instructions:

1. First, you need to cook the lobsters. Bring a large pot of salted water to a boil and add the lobsters. Cook for about 8 minutes until the shells turn bright red. Remove the lobsters from the pot and set them aside to cool.

2. Once the lobsters are cool enough to handle, remove the meat from the shells. Set the meat aside and break up the shells into smaller pieces.

3. In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the onion, carrot, celery, and garlic and cook for about 5 minutes until they soften but do not brown.

4. Stir in the tomato paste and cook for 2 minutes. Then add the lobster shells, fish stock or water, white wine, bay leaf, and thyme sprigs. Bring to a boil, reduce the heat to low, and simmer for about 45 minutes to develop the flavors.

5. After simmering, use a fine mesh strainer to strain the bisque into a clean pot. Press the shells and vegetables with a spoon to extract as much liquid as possible. Discard the shells and vegetables.

6. Now it’s time to finish the bisque. Heat the strained liquid over medium heat and stir in the heavy cream. Season with salt, black pepper, and a pinch of cayenne pepper if you prefer a little heat.

7. Add the reserved lobster meat to the bisque and simmer for 5 minutes until warmed through.

8. Taste and adjust seasoning if necessary. Ladle your lobster bisque into bowls, garnish with fresh chives or parsley, and serve immediately.
