1. Gather your materials: Before starting, ensure you have a sharp fillet knife, cutting board, kitchen shears, and disposable gloves.
2. Descale the trout: Hold the fish by its tail and use the back of your knife to remove scales, working from tail to head. This step is necessary if you plan on eating the skin.
3. Remove the head: Place the knife behind the gill plate (where the gills meet the body), and slice through at an angle downwards towards the head.
4. Cut off fins: Snip off all fins along the body using kitchen shears. Be sure to remove both dorsal (top) and ventral (bottom) fins as well as pectoral (side) fins.
