Best Ever Vegan Apple Muffins

There’s something undeniably comforting about biting into a warm, freshly baked muffin. It’s a small indulgence, a simple pleasure that can brighten up any day—especially when it’s packed with the goodness of apples and made entirely without animal products. For those who follow a vegan lifestyle or for anyone interested in reducing their dairy and egg intake without sacrificing flavor or texture, these vegan apple muffins may just be the best ever.

The key to making excellent vegan apple muffins lies in the combination of high-quality ingredients and a tried-and-tested recipe that ensures moistness, rise, and flavor in every bite. Unlike traditional recipes that rely on eggs and butter for binding and richness, vegan recipes use alternative ingredients to achieve similar results without compromising on ethics or taste.

Ingredients like unsweetened applesauce, flaxseeds, or banana puree can be used to replace the binding qualities of eggs. In this recipe, we’ll utilize flaxseeds mixed with water—an “egg” concoction that offers fiber and omega-3 fatty acids in addition to its binding properties. Coconut oil will stand in for butter, adding moisture and a hint of sweetness without dairy.

For the apple component, choose a variety that stays firm when baked, such as Granny Smith or Fuji. These apples offer a slight tartness that contrasts beautifully with the cinnamon and nutmeg spices we’ll add for warmth and depth of flavor. The apples are grated and folded into the batter, providing bursts of juicy apple with each mouthful.

Ingredients:

– 1 tablespoon ground flaxseeds

– 3 tablespoons water

– 1½ cups all-purpose flour (whole wheat flour or gluten-free all-purpose flour can also be used)

– 1/2 cup brown sugar

– 2 teaspoons baking powder

– 1/2 teaspoon baking soda

– 1 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon salt

– 1/3 cup coconut oil, melted

– 3/4 cup almond milk (or any other plant-based milk)

– 1 teaspoon vanilla extract

– 1½ cups grated apples (about 2 medium-sized apples)

– Extra sugar for topping (optional)

Instructions:

1. Preheat your oven to 375°F (190°C) and prepare a muffin tin by lining it with paper cups or lightly greasing it.

2. In a small bowl, mix the ground flaxseeds with water and set aside for about 5 minutes to thicken—this is your flax “egg.”

3. In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

4. Add the melted coconut oil, almond milk, vanilla extract, and flax “egg” to the dry ingredients. Stir until just combined; be careful not to overmix.

5. Gently fold in the grated apples until evenly distributed throughout the batter.

6. Divide the batter evenly among the muffin cups. If desired, sprinkle a little sugar on top of each muffin for added crunch.

7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

8. Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
