The Best Pumpkin Cake You’ll Ever Make

At the heart of this delectable treat is pure pumpkin puree, which imparts both moisture and a subtle earthiness that’s quintessential to any pumpkin dessert. A combination of cinnamon, nutmeg, ginger, and cloves adds a warm spiciness that complements the pumpkin flawlessly. But what really takes this cake over the top is the addition of brown sugar; its molasses-like quality deepens the flavors and adds a hint of caramel.

Ingredients:

– 2 cups all-purpose flour

– 2 tsp baking powder

– 1 tsp baking soda

– 1/2 tsp salt

– 1 and 1/2 tsp ground cinnamon

– 1/2 tsp ground ginger

– 1/4 tsp ground nutmeg

– 1/4 tsp ground cloves

– 1 cup brown sugar, packed

– 1 cup granulated sugar

– 1 cup vegetable oil

– 4 large eggs

– 15 ounces pure pumpkin puree

For the Cream Cheese Frosting:

– 8 ounces cream cheese, at room temperature

– 1/2 cup unsalted butter, at room temperature

– 3 cups powdered sugar, sifted

– 1 tsp vanilla extract

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.

3. In a large bowl, beat both sugars with vegetable oil until well blended. Add eggs one at a time, beating well after each addition.

4. Add in your dry ingredients to your wet mixture in three parts alternating with the pumpkin puree.

5. Divide batter evenly between prepared pans and smooth tops with a spatula.

6. Bake for about 25–30 minutes or until toothpick inserted in the center comes out clean.

7. Allow the cakes to cool in pans on wire racks for about 15 minutes before turning them out onto racks to cool completely.

8. While cakes are cooling, prepare the frosting by beating together cream cheese and butter until smooth and creamy. Gradually add powdered sugar then add vanilla extract until well combined.

9. Once cakes are completely cool, spread frosting on top of one layer, add second layer on top, then frost top and sides as desired.
