Make the ‘best roast potatoes you’ll ever eat’ in six simple steps

Are you ready for a game-changer in your culinary repertoire? Get set to master the art of creating the ‘best roast potatoes you’ll ever eat’ with this straightforward six-step guide! Perfect as a side dish that can steal the spotlight, these roasties will be crispy on the outside, fluffy on the inside, and chock-full of flavor.

Step 1: Select the Right Potatoes

The foundation of great roast potatoes is the type of potato. Look for high-starch varieties like Maris Piper, King Edward, or Russet potatoes – these are known for their fluffy texture when cooked.

Step 2: Cut and Size Them Uniformly

For an even roast, cut your potatoes into equal sizes. A common approach is cutting them into chunks or quarters depending on their original size. Remember, smaller pieces mean more surface area for crispiness!

Step 3: Parboil with a Twist

Before roasting, parboil your potatoes in salted water just until they start to become tender – approximately 6-8 minutes after the water comes back to a boil. The twist? Add a little baking soda to the water. This breaks down the potatoes’ surface, helping them develop that coveted extra-crispy exterior in the oven.

Step 4: Fluff and Season

After draining, give potatoes a gentle shake in the pot or toss them with a spoon to fluff their edges – this increases their surface area even more. Then coat them generously with melted butter or olive oil, and season well with salt, pepper, and any additional flavorings like garlic powder or fresh herbs.

Step 5: Roast to Perfection

Preheat your oven with your chosen fat (duck fat gives incredible flavor) at a high temperature (around 220°C/425°F). Spread your potatoes in a single layer on a roasting tray and ensure they have plenty of space. Roast for about 45-50 minutes, turning once or twice until they’re golden brown and crispy all over.

Step 6: Serve Immediately

Roast potatoes are at their best fresh out of the oven while they’re piping hot and at peak crispiness. Serve them straight away for your guests or family to marvel at your potato prowess!
