The Best Way to Cook with Endive—If You’re Not Already

Endives, with their crisp texture and slightly bitter flavor, are a versatile ingredient that can add a unique touch to various dishes. If you haven’t included this leafy green in your cooking repertoire yet, now’s the time to explore its potential. Here’s how you can master cooking with endive.

Salads: Endive leaves are perfect for salads; they offer a refreshing crunch and can hold up to strong dressing without wilting. Separate the leaves and mix them with other greens, or use the larger ones as a sturdy base for an appetizer salad cup.

Grilled or Roasted: Grilling or roasting endives is an excellent way to mellow their bitterness while enhancing their natural sweetness. Cut them in half and brush with olive oil, salt, and pepper, then grill cut-side down until charred, or roast in an oven at 375°F (190°C) until tender.

Sautéed: For a warm side dish or a unique addition to pasta, sauté sliced endive in butter or olive oil until it’s wilted and caramelized. The heat reduces the bitterness and brings out a complex sweetness that plays well against hearty dishes like stews and roasts.

Braised: Braising endives in broth, wine, or a mix of both is another fantastic cooking method. Add some herbs and garlic for flavor, cover the pan, and let them simmer gently until soft. The braising liquid can be reduced afterward to make an accompanying sauce.

As Wraps: Take advantage of the sturdy leaves of the endive by using them as wraps. They are lighter than tortillas and bring a fresh element to your dish. Fill them with grains, meats, or vegetables for a healthy and crunchy alternative to traditional wraps.

When cooking with endive, remember that the slightly bitter taste is part of its charm. By combining it with complementary flavors such as citrus, nuts, sweet fruits, or strong cheeses like blue cheese or gorgonzola, you can create balanced and intriguing dishes that stand out.

With these techniques at hand, you’re set to explore the best ways to cook with endive. Whether it’s raw in a crunchy salad or cooked into a savory side dish, endive offers texture and flavor that will elevate any meal you prepare.
