How to Prepare Fish for Sushi: 11 Steps

Step 1: Choose Quality Fish

Select fresh, high-quality fish for your sushi. Look for clear eyes, firm flesh, and a fresh aroma. Sushi-grade fish should be sold separately from other seafood and should be clearly labeled as such.

Step 2: Fillet the Fish

Using a sharp knife, carefully fillet the fish by removing the head, tail, and bones. Make sure to remove any skin and bloodlines as well. Trim off any parts that appear discolored or unappetizing.

Step 3: Wrap in Plastic and Freeze

To reduce possible foodborne illness risks, wrap your fish fillets tightly in plastic wrap and place them in a zip-top bag. Freeze the fish at -4°F (-20°C) or below for seven days before thawing in the refrigerator.

Step 4: Slice Thinly

Once the fish is thawed, use a sharp, thin-bladed knife to slice it into thin pieces suitable for sushi. Remember to always cut against the grain of the muscle fibers.

Step 5: Sushi Rice Preparation

Prepare sushi rice according to your preferred recipe. Rinse the rice until the water runs clear and then cook it with a ratio of about 1 cup of rice to 1.2 cups of water. Allow it to cool before adding sushi vinegar (a mixture of sugar, salt, and rice vinegar).

Step 6: Nori Sheets

Have toasted nori sheets ready for making sushi rolls or hand rolls (temaki). The shiny side of the nori sheet should face downward when preparing sushi.

Step 7: Rolling Mat

Use a bamboo sushi rolling mat (makisu) to help shape your sushi rolls evenly and tightly.

Step 8: Assemble Ingredients

Place a sheet of nori on your bamboo mat and evenly spread a thin layer of sushi rice across it, leaving a small margin at the top edge. Place fish and other filling ingredients in a line along the bottom edge of the sheet.

Step 9: Roll Sushi

Slowly and carefully roll the sushi, gently squeezing as you pull back on the bamboo mat to tighten the roll. Once fully rolled, use the mat to shape and firm up the sushi roll.

Step 10: Slice Rolls

Using a sharp, wet knife (to prevent sticking), slice your sushi roll into bite-sized pieces. Clean the knife after each cut for smoother slicing.

Step 11: Serve and Enjoy

Arrange your sushi on a plate and serve with pickled ginger, wasabi, and soy sauce. Enjoy your homemade sushi with friends or family!

By following these 11 steps, you can successfully prepare delicious fish for sushi that is both safe to consume and delightful to eat.
