How to Make Sauerkraut Juice: 11 Steps

Sauerkraut juice is a popular and nutritious beverage made from fermented cabbage. Rich in probiotics, vitamins, and minerals, this tangy juice can improve digestion, boost the immune system, and provide various other health benefits. Here are 11 simple steps to make your own sauerkraut juice at home.

1. Select fresh cabbage: Choose one or two heads of organic green or red cabbage to ensure high-quality sauerkraut juice.

2. Clean the cabbage: Remove the outer leaves and rinse the cabbage under cold water. Pat dry with a clean towel.

3. Shred the cabbage: Using a sharp knife or mandoline slicer, shred the cabbage thinly. Discard the core.

4. Weigh the shredded cabbage: Measure the weight of your shredded cabbage using a food scale to determine how much salt to add.

5. Add salt: Mix 2% of your shredded cabbage’s weight in non-iodized salt into the shreds, massaging until well combined.

6. Fermenting vessel: Add your salted, shredded cabbage into a clean glass jar or fermentation crock.

7. Press the cabbage: Press down on the shredded cabbage using a clean hand or wooden spoon until its natural juices cover it completely.

8. Create an anaerobic environment: Use a smaller jar filled with water or a fermentation weight to prevent any contact between sauerkraut and air during the fermentation process.

9. Store and ferment: Cover your jar with a cloth or loosely place a lid on top without sealing it completely to allow airflow during fermentation. Keep it in a cool, dark place for one to three weeks, depending on your desired taste and texture. Check regularly for signs of mold or spoilage and skim any formed residue from the surface as needed.

10. Strain and collect juice: Once your sauerkraut is fermented to satisfaction, strain it, reserving the sauerkraut juice in a separate container. You can now enjoy your freshly made sauerkraut juice, and you can also store the remaining sauerkraut for other uses.

11. Store and serve: Store your sauerkraut juice in an airtight container in the refrigerator for up to one week. Shake well before serving, and enjoy cold or room temperature for maximum health benefits.
