How to Make Rewena Bread: 11 Steps

Rewena bread is a traditional Maori bread that’s been enjoyed for centuries in New Zealand. It’s unique, delicious, and simple to make! In this article, we’ll guide you through 11 steps to making your very own Rewena bread at home.

1. Prepare the Rewena starter (bug):

To begin, you’ll need a rewena starter (a fermented mixture of flour, sugar, and water). You can make your own by combining 1 cup of flour with 1 tablespoon of sugar and enough warm water to form a thick batter. Once combined, cover the container and leave it in a warm place for 2-3 days until it gets bubbly.

2. Mix the ingredients:

In a large mixing bowl, combine 6 cups of plain flour, 1 teaspoon of salt, and 1 tablespoon of sugar.

3. dd the Rewena starter:

Stir in your fermented Rewena bug (starter) to the dry ingredients.

4. Add water:

Slowly add about 2 cups of warm water into the mixture while stirring. The dough should be soft but not too wet or sticky.

5. Knead the dough:

Turn the dough onto a lightly floured surface and knead for 5-10 minutes until it becomes smooth and elastic.

6. Leave the dough to rise:

Place the kneaded dough back into your mixing bowl, cover with plastic wrap or a damp kitchen towel, and leave it in a warm place for roughly 4 hours or until it doubles in size.

7. Knead again:

Once your dough has risen, turn it onto the counter or a flat surface and knead briefly to remove any air bubbles from the dough.

8. Shape your loaves:

Divide the dough into two equal parts and shape them into circular or oval loaves.

9. Set the loaves to proof:

Place your shaped loaves onto a greased baking tray or silicone baking mat. Allow the loaves to rest for 30 minutes in a warm place, so they can expand in size.

10. Preheat your oven:

While your loaves are proofing, preheat your oven to 390°F (200°C).

11. Bake your Rewena bread:

After the bread has properly proofed, place the baking tray in the preheated oven and bake for 30-40 minutes, or until the bread turns golden-brown and makes a hollow sound when tapped.
