How to Make Japanese Curry: 15 Steps
Japanese curry is a delicious and comforting dish that has become increasingly popular worldwide. Unlike traditional Indian curries, Japanese curry is thicker, milder, and slightly sweeter. Follow these 15 steps to make the perfect Japanese curry from scratch.
1. Gather ingredients: You will need 2 medium onions, 2 carrots, 2 potatoes, 1 apple, 1 lb of meat (chicken, beef or pork), 2 tablespoons of oil, 3 cups of water, and curry roux (store-bought or homemade).
2. Prepare vegetables: Peel and thinly slice the onions, peel and chop the carrots into bite-sized pieces, and peel and dice the potatoes.
3. Prepare meat: Cut the meat into bite-sized pieces and season with salt and pepper.
4. Prepare apple: Peel and grate the apple.
5. Heat oil: In a large pot or deep sauté pan over medium heat, warm up the oil.
6. Sauté onions: Cook the sliced onions in the oil for about 5 minutes until they are soft and caramelized.
7. Add grated apple: Add the grated apple to the caramelized onions and cook for another minute to blend flavors.
8. Add meat: Add the seasoned meat to the pot with caramelized onions and grated apple. Cook until it’s browned on all sides.
9. Add carrots: Stir in chopped carrots with the onion-meat mixture.
10. Add water: Pour in water to cover all ingredients in the pot.

12. Add potatoes: Combine diced potatoes into your mixture after simmering it for 50-60 minutes. Cook for an additional 10-15 minutes until the potatoes are tender.
13. Add curry roux: Turn off the heat once the potatoes are cooked through and break your curry roux into smaller pieces, then add them to your pot.
14. Stir: Continuously stir the mixture until your curry roux dissolves fully. This will help thicken the sauce.
15. Simmer again: Turn on the heat to bring it to a boil, then reduce and let it simmer for a couple of minutes while stirring occasionally. Your Japanese curry is now ready to serve.
