How to Make Au Jus: 9 Steps

Step 1: Gather Your Ingredients
To make a delicious au jus, you’ll need the following ingredients:
– Beef stock or beef broth (32 ounces)
– Onion (1 medium-sized, thinly sliced)
– Garlic (2 cloves, minced)
– Worcestershire sauce (2 teaspoons)
– Soy sauce (1 tablespoon)
– Fresh thyme (2 sprigs) or dried thyme (1/2 teaspoon)
– Black pepper (1/4 teaspoon, freshly ground)
– Optional: Dry red wine (1/2 cup)
Step 2: Prepare a Roasting Pan
If you are using the drippings from roast beef, make sure your roasting pan is reserved with the juices. The combination of roast beef drippings and other ingredients will give your au jus that authentic flavor.
Step 3: Sauté the Onion and Garlic
In a medium saucepan, heat one tablespoon of olive oil or butter over medium heat. Add the thinly sliced onions and cook for about five minutes until they are soft and golden brown. Then, add the garlic and cook for another one minute.

After the simmering time has passed, strain your au jus through a fine mesh sieve or cheesecloth into a serving bowl or gravy boat. This will remove any solids such as onions, garlic, and thyme sprigs, leaving you with a smooth and flavorful sauce.
