Best Watermelon Cake Recipe – How to Make Watermelon Cake

Summer is here, and it’s the perfect time to enjoy refreshing, healthy, and delicious watermelon cake. This unique and eye-catching dessert is not only perfect for parties and gatherings, but it’s also an excellent way to add some fun and creativity to your dessert table. Here’s our simple, step-by-step guide on how to make the best watermelon cake.

Ingredients:

1 large seedless watermelon

2 cups heavy whipping cream

2 tablespoons confectioners’ sugar

1 teaspoon vanilla extract

Fresh fruits (such as strawberries, blueberries, kiwi) for topping

Mint leaves (optional) for garnish

Instructions:

1. Prepare the watermelon: Begin by cutting off both ends of the watermelon so that it can stand up on a flat surface. Then, use a sharp knife to trim away the rind carefully from top to bottom, leaving only the juicy fruit exposed. Try your best to maintain an even cylindrical shape while you do this.

2. Slice the watermelon: Once you’ve removed the rind completely, grab a long knife and cut a 3-4 inch thick slice from the top of the watermelon. This will become the bottom layer of your cake.

3. Repeat step 2 for another slice: Cut another 3-4 inch thick layer from the remaining watermelon. This will be your top layer.

4. Whip the cream: In a large mixing bowl, combine heavy whipping cream with confectioners’ sugar and vanilla extract. Use an electric mixer on medium-high speed to whip until soft peaks form.

5. Assemble the layers: Place one round slice of watermelon on a serving platter or cake stand. Spread a generous amount of whipped cream over the top of this layer.

6. Stack your layers: Carefully place the second watermelon slice on top of the previous layer, aligning the edges as neatly as possible.

7. Frost the cake: Use a spatula to spread whipped cream over the top and sides of your stacked watermelon layers. Use this opportunity to smooth out any imperfections and apply extra cream where necessary to create a smooth surface.

8. Decorate with fruit: Artfully arrange your chosen fresh fruit on top of the frosted cake. You can use whole or sliced fruits or even create fruit skewers for a fun touch.

9. Garnish and serve: Add a few mint leaves to the decorated cake for an extra pop of color and flavor. Serve immediately, or chill in the refrigerator for a couple of hours before serving for best results.
