Best Sweet Potato Cookies Recipe — How To Make Sweet Potato Cookies

Sweet potato cookies are a delightful treat that combines the flavors of sweet potatoes with the irresistible texture of a soft and chewy cookie. This unique dessert is perfect for the holiday season, or any time you crave something sweet and satisfying. Not only are these cookies full of natural goodness, but they also have a unique, warming taste that is sure to please your taste buds. In this article, we will share the best sweet potato cookies recipe, along with tips on how to make these delectable treats.

Ingredients:

– 1 cup mashed sweet potatoes (about 1 medium-sized sweet potato)

– 1/2 cup unsalted butter, softened

– 1 cup brown sugar, packed

– 1 large egg

– 1 teaspoon pure vanilla extract

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/2 teaspoon salt

– 1 cup chopped pecans (optional)

Instructions:

1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line two baking sheets with parchment paper or silicone baking mats.

2. To prepare the sweet potatoes, boil them until they are fork-tender. Drain well and let them cool before mashing with a fork or potato masher.

3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy using an electric mixer or wooden spoon. Add the mashed sweet potatoes, egg, and vanilla extract; mix well to combine.

4. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Gradually add this dry mixture to the wet mixture, mixing until just combined.

5. If desired, fold in the chopped pecans and/or chocolate chips or raisins.
