Introduction:

Strawberry shortcake ice cream cake is a delightful combination of strawberry ice cream, shortcake, and fresh strawberries. This layered dessert is perfect for warm summer days and will impress your friends and family with its fruity, creamy flavors. Follow this easy-to-make recipe to indulge yourself in a mouthwatering strawberry shortcake ice cream cake.

Ingredients:

– 1 lb fresh strawberries, hulled and sliced

– 1/4 cup granulated sugar

– 1 store-bought angel food cake or yellow sponge cake

– 2 pints strawberry ice cream, softened

– 8 oz whipped topping or whipped cream

– Optional: strawberry glaze (store-bought or homemade)

Instructions:

1. In a bowl, combine the sliced strawberries and granulated sugar. Mix well and refrigerate for at least 30 minutes to allow the strawberries to release their juices.

2. Cut the store-bought angel food cake or yellow sponge cake horizontally into three even layers.

3. Prepare an 8-inch springform pan by lining it with plastic wrap. Place the bottom layer of cake at the base of the pan.

4. Spread half of the softened strawberry ice cream on top of the bottom layer of cake using a rubber spatula or an offset spatula. If desired, spread a layer of strawberry glaze over the ice cream before proceeding.

5. Layer half of the sliced strawberries over the ice cream, ensuring they are evenly distributed.

6. Place the second layer of cake on top of the strawberry layer, lightly pressing it down.

7. Spread the remaining strawberry ice cream on top of this layer and spread another layer of strawberry glaze if desired.

8. Arrange the remaining strawberries over this layer of ice cream in an even manner.

9. Place the final cake layer on top, gently pressing it down.

10. Spread whipped topping or whipped cream evenly over the entire cake, covering the sides and top.

11. Cover the cake with plastic wrap and place it in the freezer for 4-6 hours or overnight until fully set.

12. To serve, remove the strawberry shortcake ice cream cake from the springform pan by running a knife around the edges to release it. Remove the plastic wrap and transfer the cake to a serving platter.

13. Slice and enjoy your delicious strawberry shortcake ice cream cake!

Conclusion:

This simple yet scrumptious strawberry shortcake ice cream cake recipe is perfect for any summer gathering. Your guests will fall in love with the combination of textures and flavors that come together so harmoniously in this dessert. So go ahead, give this recipe a try, and feel free to customize it by adding other berries or even chocolate chips! Happy baking!
