Best Rotisserie Chicken Recipes – Easy Leftover Chicken Recipes

Rotisserie chicken is a delicious and versatile ingredient that can be transformed into an array of scrumptious dishes. If you have some leftover rotisserie chicken, don’t let it go to waste! Here are some of the best recipes that use rotisserie chicken, making it easy to enjoy tasty and creative meals without spending hours in the kitchen.

1) Rotisserie Chicken Salad

Ingredients:

– 2 cups shredded rotisserie chicken

– 1/2 cup mayonnaise

– 1/4 cup diced celery

– 1/4 cup chopped green onions

– 2 tablespoons dried cranberries

– Salt and freshly ground black pepper, to taste

Instructions:

Combine all ingredients in a bowl, season with salt and pepper, and mix well. You can enjoy this flavorful chicken salad in a sandwich or with some crackers as a quick appetizer for your next gathering.

2) Rotisserie Chicken Enchiladas

Ingredients:

– 3 cups shredded rotisserie chicken

– 1 can (10 oz) enchilada sauce

– 1 cup canned black beans, drained and rinsed

– 1 cup shredded cheddar cheese

– 8 small flour tortillas

– Optional toppings: avocado, sour cream, cilantro

Instructions:

Preheat oven to 350°F. Mix the shredded chicken, half of the enchilada sauce, and black beans in a bowl. Fill each tortilla with the mixture, roll up, and place seam-side down in a greased baking dish. Pour the remaining enchilada sauce on top before sprinkling the dish with cheese. Bake for 20 minutes or until the cheese is melted and bubbly. Serve with your favorite toppings.

3) Rotisserie Chicken Noodle Soup

Ingredients:

– 2 cups shredded rotisserie chicken

– 2 tablespoons olive oil

– 1 cup chopped carrots

– 1 cup chopped celery

– 1 medium onion, chopped

– 6 cups chicken broth

– 4 ounces egg noodles

– Salt and freshly ground black pepper, to taste

Instructions:

In a large pot, heat the oil and sauté carrots, celery, and onion until tender. Add the chicken broth, bring to a boil and let it simmer for about 10 minutes. Add the shredded chicken and noodles to the pot. Simmer for an additional 10 minutes or until the noodles are cooked through. Season with salt and freshly ground black pepper before serving hot.

4) Rotisserie Chicken Tacos

Ingredients:

– 2 cups shredded rotisserie chicken

– 1 tablespoon olive oil

– 1 small onion, chopped

– 1/2 cup salsa

– 8 small flour or corn tortillas

– Optional toppings: lettuce, shredded cheese, avocado slices

Instructions:

In a pan, heat some oil and cook the chopped onion until softened. Add the chicken and salsa, stir well while cooking for an additional five minutes. Warm your tortillas and fill them with the chicken mixture. Add your favorite taco toppings to personalize your rotisserie chicken tacos.
