Best Icebox Cookies Recipe – How To Make Icebox Cookies

Icebox cookies, also known as refrigerator cookies, are a classic treat that has stood the test of time. These easy-to-make treats are perfect for any occasion, whether you’re hosting a party or just looking for a simple dessert to satisfy your sweet tooth. With their delicious taste and melt-in-your-mouth texture, icebox cookies are sure to become a favorite in your household. In this article, we will share with you the best icebox cookies recipe and guide you on how to make these delightful treats.

Ingredients:

– 2 cups all-purpose flour

– 1/2 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 1 large egg

– 1 teaspoon pure vanilla extract

– Optional add-ins: chocolate chips, chopped nuts, dried cranberries, or sprinkle decorations

Instructions:

1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

2. In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar until smooth and fluffy. This should take about 3 minutes.

3. Add the egg and pure vanilla extract to the butter-sugar mixture and mix until well combined.

4. Gradually add the flour mixture to the wet ingredients, mixing at low speed until fully incorporated.

5. If desired, mix in any optional add-ins, such as chocolate chips or chopped nuts.

6. Divide the dough in half and shape each half into a log approximately 1.5 inches in diameter.

7. Wrap each log tightly in plastic wrap and refrigerate for at least 2 hours or until firm enough to slice.

8. When you’re ready to bake the cookies, preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

9. Remove one log of dough from the refrigerator and unwrap it. Using a sharp knife, slice the log into rounds about 1/4-inch thick.

10. Place the cookie rounds onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

11. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.

12. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.

13. Repeat steps 9-12 with the remaining log of dough.
