Best Confetti Squares Recipe: How to Make Confetti Squares

Confetti squares, also known as marshmallow squares or rainbow butterscotch squares, are a delightful dessert treat that’s perfect for any occasion. With their vibrant colors, chewy texture, and sweet taste, they’re sure to satisfy your sweet tooth while adding a pop of color to your dessert table. In this article, we’ll guide you through the steps of making the best confetti squares recipe.

Ingredients:

– 1/2 cup (1 stick) unsalted butter

– 1 cup peanut butter

– 1 bag (10.5-12 ounces) mini marshmallows

– 1 bag (11 ounces) butterscotch chips

– 1 bag (11 ounces) chocolate chips

– 1 teaspoon pure vanilla extract

– Optional: 1 cup chopped nuts or additional desired mix-ins (e.g., crushed rice cereal, coconut flakes)

Instructions:

1. Prepare an 8×8-inch or 9×9-inch baking pan by lining it with parchment paper so that the sides hang over the edges. This allows for easy removal later on. Lightly grease the parchment paper with non-stick cooking spray.

2. In a large saucepan, melt the butter and peanut butter over low heat, stirring occasionally until smooth and combined.

3. Once both ingredients are melted and combined, add in your butterscotch and chocolate chips. Continue to cook on low heat while stirring constantly until they’re melted and fully incorporated into the mix.

4. Remove the saucepan from heat. Stir in the vanilla extract and allow the mixture to cool for a few minutes before proceeding. This helps prevent your marshmallows from melting too quickly when added.

5. When your mixture has cooled down slightly yet still remains pourable, fold in the marshmallows and your choice of additional mix-ins (if using). Gently mix until the marshmallows are evenly coated with the chocolate-peanut butter mixture.

6. Pour the mixture into your prepared baking pan. Use a spatula or greased hands to gently press the confetti square mixture into an even layer in the pan.

7. Allow the confetti squares to set at room temperature for at least 2 hours, or until they’ve solidified. Alternatively, you can place them in the fridge to set more quickly, but make sure to enjoy them at room temperature for optimal taste and texture.

8. Once your confetti squares have set, use the overhanging parchment paper to lift them out of the pan onto a cutting board. Use a sharp knife to cut them into squares or other desired shapes.
