2. Gently toss the ramps in olive oil, salt, and pepper.

3. Place ramps directly on the grill grate, making sure they are evenly spaced.

4. Cook for 1-2 minutes per side or until they become slightly charred.

5. Remove from grill and serve as a side dish or add them to salads, sandwiches, or pasta dishes.

2. Ramp Pesto

Ramp pesto adds a twist to the traditional basil-based recipe and offers an extra burst of flavor.

Ingredients:

– 1 bunch of fresh ramps (trimmed and cleaned)

– 1/2 cup grated Parmesan cheese

– 1/2 cup pine nuts or walnuts

– 3/4 cup olive oil

– Salt and pepper

Instructions:

1. In a food processor or blender, add ramps, nuts, Parmesan cheese, salt, and pepper.

2. While blending, gradually pour in olive oil until the mixture becomes smooth.

3. Serve with pasta dishes or use as a spread on sandwiches, crackers, or vegetables.

3. Pickled Ramps

Pickling preserves ramps’ unique taste so you can enjoy them all year round.

Ingredients:

– 2 tablespoons kosher salt

– 1/2 teaspoon black peppercorns

– 1/2 teaspoon mustard seeds

Instructions:

1. Bring vinegar, water, sugar, and salt to a boil in a saucepan.

2. Stir in peppercorns and mustard seeds.

3. Place ramps in a clean sterilized jar.

4. Pour the hot pickling liquid over ramps, ensuring they are fully submerged.

5. Seal the jar and refrigerate for at least a week before enjoying them with salads, sandwiches, or charcuterie boards.

4. Ramp and Potato Soup

Potato soup is a classic comfort food that can be elevated by adding ramps for extra flavor.

Ingredients:

– 1 tablespoon olive oil

– 2 cups chopped ramps (trimmed and cleaned)

– 5 cups cubed potatoes

– Salt and pepper

Instructions:

1. Heat oil in a large pot over medium heat.

2. Add chopped ramps and cook until softened.

3. Add potatoes to the pot and cook for a few more minutes.

4. Add broth to the pot and bring to a boil.

5. Reduce heat and simmer until potatoes are tender (about 20 minutes).

6. Remove from heat and use an immersion blender to create a smooth or partially smooth texture.

7. Season with salt and pepper to taste.
