4 Ways to Cook Pork Neckbones

Pork neckbones, also known as pork spine, are an underappreciated cut of meat that offer a unique and indulgent dining experience. They are perfectly suited for slow-cooking methods which help to release the hidden flavors and tenderize the meat. Here are four delicious ways to cook pork neckbones to add variety to your meal rotation.

1. Slow Cooker Pork Neckbone Soup

A slow cooker brings out the rich flavors of pork neckbones, transforming the meat and bone marrow into a delectable broth ideal for a hearty soup. To prepare, simply place the neckbones, roughly chopped vegetables (such as carrots, celery, and onions), along with your desired seasonings and herbs, in a slow cooker. Fill it with enough water or broth to submerge everything. Set the cooker on low heat and cook for 8-10 hours or until the meat falls off the bone.

2. Oven-Roasted Pork Neckbones

Oven roasting is another excellent method for cooking pork neckbones since it creates a crispy exterior while keeping the inside tender and moist. Preheat your oven to 375°F (190°C). Season clean neckbones generously with salt, pepper, and any other desired spices or herbs, then place them onto a baking sheet or roasting pan lined with aluminum foil. Roast in the preheated oven for approximately 45-60 minutes; occasionally basting with pan drippings.

3. Grilled BBQ Pork Neckbones

Grilling imparts a delightful smoky flavor that complements the rich taste of pork neckbones. To make sure they’re cooked evenly and thoroughly, it’s best to simmer them first in a pot of seasoned water or stock until they’re slightly tender but not overcooked. Afterward, pat them dry and coat with your favorite BBQ sauce before placing them on preheated grill grates over medium heat. Grill each side for 5-10 minutes, basting repeatedly with more BBQ sauce.

4. Braised Pork Neckbones

Braising combines a slow, moist cooking method with the meaty flavors of pork neckbones which results in a crave-worthy dish. In a large pot or Dutch oven, sear seasoned neckbones in oil over medium-high heat until browned on all sides. Remove the neckbones and sauté onions, garlic, and other desired vegetables until softened. Deglaze the pan with your choice of liquid (beer, wine, or broth), and add the neckbones and preferred herbs back into the pot. Close the lid and let it simmer at low heat for 2-3 hours until tender.
