3 Ways to Cook Hominy

Hominy is a traditional Native American ingredient made from whole corn kernels that have been soaked in an alkaline solution to remove their tough outer layer. This process, called nixtamalization, imparts a unique texture and flavor to the hominy, making it a versatile and delicious choice for many dishes. In this article, we will explore three different ways to cook hominy, so you can enjoy this hearty and nutritious ingredient in various forms.

1. Boiled Hominy

Boiling is perhaps the most common method of cooking hominy. It’s simple and brings out the natural flavors of the hominy.

Ingredients:

– 1 cup dried hominy

– 4 cups water

– Salt to taste

Instructions:

1. Rinse the dried hominy well in cold water, using a colander or sieve.

2. In a large pot, combine the hominy with four cups of water.

3. Bring the water to a boil, then reduce the heat to a simmer.

4. Cook the hominy uncovered for about 1-2 hours or until it reaches your desired tenderness. Be sure to stir occasionally and add more water if needed.

5. Once cooked, drain any remaining water and season with salt, if desired.

2. Hominy in a Slow Cooker

A slow cooker allows for longer cooking times which can result in even more tender hominy.

Ingredients:

– 1 cup dried hominy

– 4 cups water

– Salt to taste

Instructions:

1. Rinse the dried hominy thoroughly under cold running water.

2. Place the rinsed hominy in the slow cooker and add four cups of water.

3. Cover and cook on low for 6-8 hours or until tender. Stir occasionally and add more water if necessary.

4. Once cooked, drain any excess water and season with salt, if desired.

3. Baked Hominy Casserole

By baking hominy in a casserole dish with cheese and other flavorful ingredients, you can create a tasty, comforting meal.

Ingredients:

– 2 cups cooked hominy

– 1 cup grated cheddar cheese

– 1 small onion, chopped

– 1/4 cup butter, melted

– 1/4 cup all-purpose flour

– 1/2 teaspoon salt

– 1/2 teaspoon paprika

– 2 cups milk

– Freshly ground black pepper to taste

Instructions:

1. Preheat your oven to 350°F (175°C).

2. In a medium saucepan over medium heat, melt the butter. Add the chopped onion and cook until softened.

3. Stir in the flour, salt, and paprika. Gradually add the milk while whisking continuously to avoid lumps. Cook for about 5 minutes or until the mixture thickens.

4. Remove the sauce from heat and stir in half of the grated cheddar cheese. Mix until the cheese is melted.

5. In a large mixing bowl, combine the cooked hominy with the cheese sauce.

6. Grease a casserole dish and pour in the hominy mixture. Top with the remaining cheddar cheese.

7. Bake for approximately 30 minutes or until the casserole is bubbly and golden brown on top.
