The Best Vegan Mashed Potatoes Start With Yukon Golds

When it comes to making the creamiest, most flavorful vegan mashed potatoes, the secret begins with choosing the right type of potato. Yukon Golds are arguably the best choice for creating a dish that’s not only rich and smooth but also deeply satisfying for both vegans and non-vegans alike.

Yukon Gold potatoes are known for their golden color and buttery flavor. They have a medium starch content that’s higher than red potatoes but lower than Russets, which makes them perfect for mashing. This balance ensures that your mashed potatoes will be creamy without being too dense or gluey.

To start your perfect vegan mashed potato dish, first peel your Yukon Gold potatoes (although you can keep the skins on for added texture and nutrition). Cut them into uniform pieces to ensure even cooking and boil them in well-salted water until they’re tender — typically about 15 to 20 minutes.

The next step is what gives these mashed potatoes their vegan magic: instead of butter or cream, opt for high-quality vegan butter and a plant-based milk such as almond, soy, or oat.
