The Absolute Best Way To Freeze Cabbage

Freezing cabbage is an excellent way to extend its shelf life and ensure that you always have a healthy vegetable on hand for your meals. To freeze cabbage the absolute best way, here’s a step-by-step guide:

Step 1: Select the Right Cabbage

Choose fresh, firm heads of cabbage. Avoid any that have limp leaves or show signs of browning or spoilage.

Step 2: Clean and Prepare

Remove the outer leaves and rinse the cabbage under cold water. Shake off excess moisture.

Step 3: Cut to Preferred Size

Depending on your future use, cut the cabbage into wedges, shreds, or chunks. Remove the hard stem from each piece.

Step 4: Blanching

Blanching is crucial for inhibiting enzyme action that can lead to loss of flavor, color, and texture. Bring a large pot of water to a boil and blanch the cabbage pieces for about 1.5-3 minutes (wedges take longer), then quickly transfer them into ice water to halt the cooking process.

Step 5: Drain and Dry

After cooling for the same amount of time as blanched, drain the pieces well and let them dry on a clean kitchen towel. Removing excess moisture is key to preventing ice crystals from forming.

Step 6: Pre-freezing

Spread out the dried pieces on a baking sheet lined with parchment paper so they’re not touching, and freeze until solid (usually a few hours). This step helps prevent clumping.

Step 7: Packaging

Transfer the frozen cabbage pieces into freezer bags or airtight containers. Remove as much air as possible before sealing to prevent freezer burn.

Step 8: Labeling and Freezing

Label each package with the date and content. Place them in the coldest part of your freezer.

By following these steps, you can preserve your cabbage for up to 9 months while maintaining its quality relatively well. When you’re ready to use it, there’s no need to thaw; simply cook it directly from its frozen state to enjoy all the benefits of fresh cabbage without any waste.
