New Mexico is a state renowned for its rich and vibrant Southwest cuisine, a staple of which is the beloved chile relleno. The chile relleno, which literally means “stuffed pepper,” consists of a green chile pepper filled with cheese (and sometimes meat), dipped in an egg batter, and fried to golden perfection.
