Ingredients:
– 3 pounds corned beef brisket
– 1 small head of green cabbage, chopped into wedges

– 2 cloves garlic, minced
– 4 cups water
– 1/2 cup beer (optional)
– Pickling spice packet (included with corned beef)

Directions:
1. Start by prepping your vegetables. Chop the cabbage into wedges, ensuring that each piece has some of the core to hold it together. Scrub the red potatoes clean and cut them in half. Peel and slice the carrots into 2-inch chunks. Finally, coarsely chop the onion.
2. Place the prepared vegetables in the bottom of your slow cooker in an even layer with red potatoes, onion, carrots, and garlic.
3. Rinse the corned beef brisket under cold water to remove any excess salt before placing it on top of the vegetables in the slow cooker.
4. Sprinkle pickling spice packet included with corned beef over the top of the brisket.
5. Pour four cups of water (or enough to cover) into the slow cooker. If you prefer a deeper flavor for your dish, feel free to replace half a cup of water with half a cup of beer.

9. Use a slotted spoon to transfer vegetables onto a platter, then place sliced corned beef alongside them.
