How to Sauté Mushrooms

Sautéing mushrooms is an easy, delicious way to prepare these versatile fungi. With a few simple ingredients and these 11 steps, you’ll be well on your way to a tasty side dish or flavorful addition to your favorite meals.

1. Choose the right mushrooms: Pick out fresh, firm mushrooms with dry surfaces. Avoid those with slimy or damp spots. Common varieties like white button, cremini, or shiitake mushrooms are great for sautéing.

2. Clean the mushrooms: Gently brush off any dirt with a soft brush or damp cloth. Do not soak or rinse the mushrooms in water, as they will absorb moisture and become soggy when cooked.

3. Cut and trim: Slice the mushrooms into evenly sized pieces. If using larger varieties like portobello mushrooms, remove the stems and gills.

4. Gather your ingredients: In addition to your prepared mushrooms, you will need butter or oil for cooking, minced garlic or shallots (optional), salt and pepper for seasoning, and fresh herbs like thyme or parsley for garnishing.

5. Prepare your pan: Use a wide skillet with high sides for even heat distribution. Preheat the pan over medium heat before adding your cooking fat.

6. Add butter or oil: Melt 1-2 tablespoons of butter or heat an equal amount of oil in the skillet until it begins to shimmer.

7. Add garlic or shallots (optional): If using garlic or shallots for added flavor, add them to the skillet and cook for 1-2 minutes until fragrant.

8. Sauté the mushrooms: Add the sliced mushrooms to the skillet in a single layer without crowding them too closely together. This ensures even cooking and prevents steaming.

9. Season: Once the mushrooms begin browning on one side (approximately 3-4 minutes), stir them occasionally. Season with salt and pepper to taste.

10. Cook until done: Continue sautéing the mushrooms, stirring occasionally, until they are browned and tender (approximately 7-10 minutes).

11. Garnish and serve: Once cooked to your desired texture, turn off the heat and add a sprinkling of fresh herbs for added flavor. Serve the sautéed mushrooms as a side dish or incorporate them into your favorite recipes.
