How to Make Pirouline Wafers: 9 Steps

Pirouline wafers are a delicate and delicious confection loved by people all over the world. These crispy, rolled wafers are filled with rich, creamy chocolate or other flavored fillings to create the perfect combination of taste and texture. In this article, we will guide you through 9 simple steps to make homemade Pirouline wafers.

Step 1: Gather Ingredients

To make your Pirouline wafers, gather the following ingredients:

– 4 large egg whites

– 1 cup granulated sugar

– 1 cup all-purpose flour

– 1/2 cup unsalted butter, melted

– Pinch of salt

– Flavored filling of your choice (chocolate, hazelnut, etc.)

Step 2: Preheat Oven and Prepare Baking Sheet

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat. This will help prevent the wafers from sticking during baking.

Step 3: Prepare the Wafer Batter

In a large mixing bowl, whisk together egg whites and sugar until frothy. Next, incorporate the flour and salt while slowly adding in the melted butter. Whisk until smooth to create a thin batter.

Step 4: Scoop and Spread the Batter

Use a spoon or small scooper to dollop about one tablespoon of batter onto the prepared baking sheet. Use the back of the spoon or an offset spatula to spread each scoop into a thin, even circle about 3 inches in diameter.

Step 5: Bake Wafers

Place the baking sheet in your preheated oven and bake for approximately 6-8 minutes or until the edges of each wafer start to turn golden brown.

Step 6: Roll Wafers Quickly

While still warm, use a small spatula or butter knife to lift the edge of each wafer. Immediately roll it tightly around the handle of a wooden spoon or a Pirouline wafer mold. Hold it in place for a few seconds so it maintains its shape.

Step 7: Remove and Cool

Gently slide the rolled wafer off the spoon handle or mold and place it on a wire rack to cool. Repeat Steps 4-6 for the remaining batter, working quickly so that wafers don’t become too crisp to shape.

Step 8: Prepare the Filling

Melt your choice of flavored filling (chocolate, hazelnut, etc.) in a microwave-safe bowl, stirring until smooth.

Step 9: Fill Wafers

Once the wafers have cooled completely, use a small piping bag or Ziploc bag with a corner snipped off to pipe the filling into each pirouline wafer. Allow filled wafers to set for several minutes before serving.

Enjoy your homemade Pirouline wafers with a cup of coffee or tea, or as an elegant dessert for your next gathering. These delightful treats are sure to impress any crowd!
