How to Make Leche Flan: 11 Steps

Leche flan is a delicious and creamy Filipino dessert made from egg yolks, milk, sugar, and vanilla extract. It is also known as caramel custard or crème caramel in other countries. These 11 straightforward steps will help you create a perfect leche flan for your family and friends.

1. Gather your ingredients:

– 10 egg yolks

– 1 can (14 ounces) condensed milk

– 1 can (12 ounces) evaporated milk

– 1 teaspoon pure vanilla extract

– 3/4 cup granulated sugar

2. Prepare a steamer with a large capacity or a pot with a steam rack and fill it halfway with water. Bring the water to a gentle boil.

3. In a non-stick saucepan, melt the granulated sugar over low heat until it turns into a golden brown liquid (caramel). Stir continuously to avoid burning the sugar.

4. Once the caramel is ready, quickly pour it into an llanera mold or a large round pan. Swirl the caramel around to evenly coat the bottom of the mold. Set aside to let the caramel cool and harden.

5. In a large mixing bowl, gently whisk together the egg yolks, condensed milk, evaporated milk, and vanilla extract until combined. Be careful not to create too many bubbles while mixing.

6. Using a fine mesh strainer or cheesecloth, strain the custard mixture into another bowl to ensure its smoothness and remove any lumps or impurities.

7. Pour the strained custard mixture into the prepared llanera mold over the cooled caramel layer.

8. Cover the llanera mold with aluminum foil to prevent condensation from dripping onto the custard during steaming.

9. Place the llanera mold onto the steam rack in the steamer or pot. Reduce heat to maintain a gentle boil, and steam the leche flan for 40-

45 minutes or until a toothpick inserted in the center comes out clean.

10. Once cooked, carefully remove the llanera mold from the steamer and let it cool to room temperature.

11. Refrigerate the leche flan for at least 2 hours or overnight for best results. When ready to serve, run a knife around the edges of the mold and invert it onto a serving plate to release the leche flan. Enjoy your delicious homemade dessert!
