How to Make Kunafa: 14 Steps
Kunafa, also known as Kanafeh or Konafa, is a traditional Middle Eastern dessert with a rich and creamy filling, encased in a crispy, shredded pastry and topped with a delicious sugar syrup. 1. Gather ingredients:
– 1 pound (450g) of Kunafa or Kadaif dough (shredded phyllo dough)
– 1 cup of melted unsalted butter or ghee
– 2 cups of ricotta cheese or any thick and creamy unsweetened cheese
– 2 cups of mozzarella cheese (shredded)
– 1/4 cup of sugar
– 1/2 teaspoon of ground cinnamon
– 1/2 cup of crushed pistachios for garnishing
2. For sugar syrup:
– 1 cup of sugar
– 1/2 cup of water
– A few drops of lemon juice
– 1 teaspoon of rose water
3. Preheat the oven to 350°F (180°C).
4. Prepare the sugar syrup by combining sugar, water, and lemon juice in a saucepan. Bring it to a boil and keep stirring till the sugar melts completely. Lower the heat and let it simmer for about 10 minutes. Then add rose water and set aside.
5. In another bowl, mix together ricotta cheese, mozzarella cheese, sugar, and cinnamon till it forms a consistent mixture.
6. Cut the Kunafa dough into shorter pieces using scissors.
7. Grease a round baking pan with some melted butter.
8. Divide the shredded phyllo dough into two equal parts.
9. Mix one part with melted butter and spread it evenly at the bottom of the greased pan, pressing it down to form the base.
10. Spread the cheese mixture evenly over the dough base.
11. Mix the other half of the shredded phyllo dough with the remaining melted butter and spread it on top of the cheese layer, pressing down lightly.
12. Bake your Kunafa in the preheated oven for 30 to 40 minutes until the top turns golden brown.
13. Remove your Kunafa from the oven and immediately pour the cooled syrup over it while still hot. Let it soak for a few minutes.
