How to Harvest Arugula: 11 Steps

Arugula, also known as rocket or roquette, is a popular leafy green with a peppery flavor that can add a zesty kick to your salads and sandwiches. Growing arugula in your garden is an easy endeavor, but when it comes time to harvest, proper technique is essential to ensure continued growth and high-quality produce. Follow these 11 steps for a successful arugula harvest.

1. Monitor plant growth: Keep an eye on your arugula plants throughout the growing process. Once the leaves begin to mature and reach a length of 2-6 inches, they are ready for harvesting.

2. Choose the right time of day: Harvest arugula early in the morning or late in the afternoon when temperatures are cooler and the leaves are less likely to wilt.

3. Inspect the leaves: Before harvesting, inspect the leaves for any signs of disease, pests, or damage. Only pick healthy leaves in order to maintain a productive garden.

4. Clean your hands and tools: To prevent the spread of disease or pests, ensure your hands and cutting tools are clean before proceeding.

5. Use sharp scissors or garden shears: Using clean, sharp scissors or garden shears will help make clean cuts without crushing the plant stems.

6. Cut close to the base: Make your cuts about half an inch from where the leaf meets the stem or other greenery. This encourages regrowth and multiple harvests throughout the season.

7. Harvest selectively: Rather than harvesting all leaves from one plant at once, remove only a portion of mature leaves while leaving younger ones behind. This allows plants to continue growing and producing new foliage for future harvests.

8. Rotate plants: Harvest from different plants each time you pick arugula to avoid taxing individual plants too heavily and ensure a steady supply throughout the season.

9. Wash harvested leaves: Once you have collected your arugula leaves, gently rinse them in cool water to remove any dirt or debris.

10. Dry and store leaves: Gently pat the washed arugula leaves dry using a clean towel or a salad spinner. Once completely dry, store in an airtight container or plastic bag lined with paper towels in the refrigerator.

11. Monitor for regrowth: After harvesting, continue to care for your plants by watering regularly and providing adequate sunlight. Keep an eye out for regrowth and be ready to harvest again when the new leaves mature!
