How to Cook Paksiw Na Pata

Paksiw na pata is a flavorful Filipino dish, made using pork hocks cooked in a rich and tangy sauce. The slow-cooking process allows the flavors to fully develop, making it a delicious and satisfying meal that’s perfect for any occasion. In this article, we’ll walk you through the steps on how to cook this delectable dish from scratch.

Ingredients:

– 1 large pork pata (pork hock), cut into pieces

– 1/2 cup vinegar

– 1/4 cup soy sauce

– 1/4 cup brown sugar

– 1 cup water

– 2 tablespoons oil

– 6 cloves garlic, crushed

– 1 medium onion, chopped

– 2 bay leaves (laurel leaves)

– 1 teaspoon whole peppercorns

– Salt to taste

Instructions:

  1. Prepare the pork hock by cleaning it thoroughly under running water. Pat dry using a clean kitchen towel.
  2. In a large pot or deep pan, heat the oil over medium heat. Add the crushed garlic and sauté until golden brown. Be careful not to burn the garlic, as this can give your dish a bitter taste.
  3. Add the chopped onion to the pot and sauté until softened and translucent.
  4. Place the pork hock pieces in the pot and sear each side for about 3 to 5 minutes, or until light golden brown.
  5. Once browned, add the vinegar, soy sauce, brown sugar, water, bay leaves, and peppercorns to the pot. Mix well to ensure all ingredients are combined.
  6. Bring the mixture to a boil over high heat before reducing it to a simmer. Cover the pot with a lid and allow it to cook for about 1 to 1.5 hours, or until the pork hock is fork-tender.
  7. Once the pork hock is cooked through, taste the sauce and adjust seasoning with salt if needed. If you prefer a thicker sauce, you can remove the pork from the pot and continue simmering the sauce until it reduces to your desired consistency.
  8. Serve your paksiw na pata hot with steamed white rice or another accompaniment of your choice.

There you have it – a simple and flavorful recipe for traditional Filipino paksiw na pata. With its rich, tangy sauce and tender, melt-in-your-mouth pork hocks, this dish is sure to be a hit at any gathering. Enjoy!
