How to Cook Lugaw

Lugaw, also known as rice porridge or congee, is a popular Filipino comfort food that’s easy to prepare and enjoyed by people of all ages. Known for its soothing properties, Lugaw is the perfect dish for when you’re feeling under the weather or simply craving a warm and filling meal. In this article, we’ll provide a step-by-step guide on how to cook Lugaw.

Ingredients:

– 1 cup uncooked Jasmine rice

– 8 cups water or chicken broth (for more flavor)

– 1 tablespoon vegetable oil

– 1 medium onion, chopped

– 3 cloves garlic, minced

– 1-inch piece of ginger, peeled and thinly sliced

– 1 lb. boneless, skinless chicken thighs or breast, cubed (optional)

– Salt and pepper to taste

– Toppings of your choice: hard-boiled eggs, chopped green onions, fried garlic, lemon wedges

Instructions:

1. Rinse the rice under cold running water until the water runs clear. This will help remove excess starch and prevent the Lugaw from becoming too thick.

2. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the onions and sauté until translucent, about two minutes.

3. Add the minced garlic and ginger slices. Continue to sauté for an additional one minute, ensuring not to burn the garlic.

4. If using chicken as a protein source in your Lugaw, add the cubed chicken to the pot with the sautéed vegetables. Season with salt and pepper to taste. Cook until chicken is no longer pink.

5. Add the rinsed rice to the pot and stir well with other ingredients. Cook for about three minutes or until rice begins to slightly stick at the bottom of the pot.

6. Pour in the water or chicken broth to the pot. Bring the mixture to a boil.

7. Once boiling, lower the heat and let it simmer gently. Stir occasionally to prevent the rice from sticking at the bottom of the pot. Cook for about 30 to 45 minutes, until rice is tender and porridge has reached your preferred consistency.

 

8. Adjust seasoning with additional salt and pepper to taste.

9. Serve your Lugaw hot in individual bowls. Top with toppings of your choice such as hard-boiled eggs, chopped green onions, fried garlic, and lemon wedges.
