Corned Beef Brisket Recipe – How to Make Roast Corned Beef Brisket

Introduction:

Corned beef brisket is a flavorful and savory dish that has been enjoyed for centuries. This popular comfort food is a staple in many households, especially during St. Patrick’s Day and other festive gatherings. In this article, we will guide you through the process of making a mouth-watering roast corned beef brisket that will be the talk of the table.

Ingredients:

– 4 lb corned beef brisket

– 2 tbsp brown sugar

– 2 tsp black pepper

– 1 tsp ground mustard

– 1/2 teaspoon garlic powder

– 6 medium carrots, peeled and chopped into chunks

– 6 medium potatoes, peeled and quartered (Russet or Yukon Gold are best)

– 1 large onion, peeled and cut into eighths

– 2 cups water or beef broth

Instructions:

1. Preheat the oven to 350°F (175°C).

2. Remove the corned beef from its package, discard any liquid, and place it on a cutting board with the fat side up. Trim off any excess fat.

3. In a small bowl, mix the brown sugar, black pepper, ground mustard, and garlic powder together. Rub this mixture generously over the entire surface of the corned beef.

4. Prepare a roasting pan by placing a wire rack inside it to elevate the brisket during cooking. Add two cups of water or beef broth to the pan.

5. Place the corned beef on the wire rack, fat side up, and cover the roasting pan tightly with aluminum foil or a lid.

6. Roast the corned beef for 50 minutes per pound (approximately 3 hours for a 4 lb brisket). The internal temperature should reach at least 145°F (63°C) before removing it from the oven.

7. While the corned beef is roasting, prepare the vegetables. In a large bowl, combine the carrots, potatoes, and onions. Toss with a tablespoon of oil, salt, and pepper to taste.

8. Remove the corned beef from the oven and scatter the prepared vegetables around it. Return the roasting pan to the oven, uncovered, for an additional 45-60 minutes or until the vegetables are tender.

9. Once done, let the corned beef rest on a cutting board for 15 minutes before slicing against the grain into thin pieces.

10. Serve your delicious roast corned beef brisket alongside the cooked vegetables. Enjoy!
