Best Skillet Chicken Pot Pie Recipe – How to Make Skillet Chicken Pot Pie

Skillet Chicken Pot Pie is the ultimate comfort food with juicy chicken, tender vegetables, and a flaky crust. This one-pan wonder will quickly become your go-to recipe for family dinners and potlucks alike. Read on to discover how to make the best Skillet Chicken Pot Pie that is simple yet scrumptious.

Ingredients:

– 4 tablespoons unsalted butter

– 1 tablespoon olive oil

– 1 pound boneless, skinless chicken breasts, diced

– 1 medium onion, finely chopped

– 2 cloves garlic, minced

– 1/3 cup all-purpose flour

– 3 cups low-sodium chicken broth

– 1 cup frozen peas and carrots mix

– 1 cup frozen corn kernels

– 1 teaspoon fresh thyme leaves, chopped

– Salt and pepper, to taste

– 1 sheet refrigerated pie crust

Instructions:

1. Preheat your oven to 425°F (220°C) as you get started with the recipe.

2. In a large oven-safe skillet, heat the butter and olive oil over medium heat. Once the butter has melted, add the diced chicken breasts and cook until browned and cooked through, about 6 to 8 minutes. Transfer the cooked chicken to a plate and set aside.

3. In the same skillet, add more olive oil if needed and sauté the chopped onion for about 3 to 4 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional minute.

4. Sprinkle the flour over the onions and garlic, stirring constantly as you cook for another minute. Gradually pour in the chicken broth while continuing to whisk until there are no lumps of flour remaining.

5. Bring the mixture to a simmer, allowing it to thicken for about 5 minutes. Stir occasionally to ensure even cooking.

6. Add the frozen peas and carrots, corn, cooked chicken, chopped thyme leaves, salt, and pepper to the skillet. Stir everything together and cook for an additional 3 to 4 minutes or until the vegetables are tender.

7. Unroll the pie crust over the skillet, stretching it slightly if needed to cover the entire surface. Cut four slits in the crust to make venting holes, ensuring steam can escape as the pie bakes.

8. Place the skillet on a baking sheet lined with aluminum foil to catch any potential drips. Transfer it into your preheated oven and bake for 25 to 30 minutes, or until you see that the crust is golden brown and filling is bubbling around the edges.

9. Once your Skillet Chicken Pot Pie is done baking, remove it from the oven and allow it to cool for about 10 minutes before serving.
