Best Raspberry Cheesecake Bars Recipe – How To Make Raspberry Cheesecake Bars

Introduction:

Raspberry cheesecake bars are the perfect dessert for any occasion. These delicious treats combine the creaminess of cheesecake with the tanginess of fresh raspberries, resulting in a mouthwatering concoction that is sure to impress your friends and family. If you love cheesecake and raspberries, then you must try this easy and delectable recipe.

Ingredients:

– 1 ½ cups graham cracker crumbs

– 6 tablespoons unsalted butter, melted

– ¼ cup granulated sugar

For the cheesecake filling:

– 2 (8 ounce) packages cream cheese, softened

– ½ cup granulated sugar

– 2 large eggs

– 1 teaspoon pure vanilla extract

– ¼ cup sour cream

For the raspberry swirl:

– 1 cup fresh or frozen raspberries, thawed if using frozen

– 3 tablespoons granulated sugar

– 1 tablespoon cornstarch

Instructions:

1. Preheat your oven to 325°F (160°C) and line a 9×9-inch baking pan with parchment paper, leaving an overhang on two of the sides for easy removal of the cheesecake bars.

2. In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until fully combined. Press this mixture evenly into the bottom of your prepared pan and set aside.

3. In a large mixing bowl or electric stand mixer, beat the cream cheese until smooth. Add in the sugar and mix until fully incorporated. Mix in the eggs one at a time, followed by the vanilla extract and sour cream. Make sure not to overmix; just combine until smooth.

4. Pour this cheesecake filling onto your prepared crust and spread it out evenly using a rubber spatula.

5. To make the raspberry swirl, add the raspberries, sugar, and cornstarch to a blender or food processor and puree until smooth. Pour this mixture through a fine mesh strainer to remove any seeds.

6. Drop spoonfuls of the raspberry puree onto the top of your cheesecake layer. Use a knife or a skewer to swirl the raspberry puree into the cheesecake, creating a beautiful design.

7. Bake your raspberry cheesecake bars for 35-40 minutes or until the edges are set and the middle only has a slight jiggle.

8. Allow your cheesecake bars to cool in the pan, then transfer them to the refrigerator and chill for at least 4 hours or overnight for best results.

9. To serve, lift the parchment paper out of the pan and cut your raspberry cheesecake bars into squares with a sharp knife. Enjoy!
