Best Mexican Beef ‘N Rice Skillet Recipe – How to Make Mexican Beef ‘N Rice Skillet

Ingredients:

– 1 lb ground beef

– 1 cup uncooked long grain white rice

– 2 cups low-sodium beef broth

– 1 can (15 oz) black beans, rinsed and drained

– 1 can (14.5 oz) diced tomatoes with green chilies, undrained

– 1 can (7 oz) whole kernel corn, drained

– 1 small onion, chopped

– 2 cloves garlic, minced

– 1 bell pepper, chopped (any color)

– 1 tsp ground cumin

– 1 tsp chili powder

– 1/2 tsp smoked paprika

– Salt and pepper to taste

– Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro, diced avocado

Instructions:

1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking up any large pieces with a spoon as it cooks. Drain any excess fat from the skillet.

2. Stir in the uncooked rice, onion, bell pepper, and garlic. Cook for about 5 minutes until the vegetables are partially softened, stirring occasionally to prevent the rice from sticking to the pan.

3. Add in the diced tomatoes with green chilies (including juices), black beans, whole kernel corn, beef broth, cumin, chili powder, smoked paprika, salt, and pepper. Stir well to combine all the ingredients.

4. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the rice is cooked through and has absorbed most of the liquid. Make sure to stir occasionally to prevent sticking and ensure even cooking.
