Best Keto Blueberry Muffins Recipe – How To Make Keto Blueberry Muffins

Introduction:

If you’re on a keto diet and missing some of your favorite baked goods, these keto blueberry muffins are the answer! They’re not only low in carbohydrates, but also incredibly satisfying and delicious. Join us as we prepare a perfect batch of keto blueberry muffins that’ll delight your taste buds and keep you on track with your diet.

Ingredients:

– 2 cups almond flour

– 1/2 cup granulated erythritol or other keto-friendly sweetener

– 1 tbsp baking powder

– 1/4 teaspoon salt

– 1/4 cup melted unsalted butter

– 1/4 cup unsweetened almond milk

– 3 large eggs

– 1 tsp pure vanilla extract

– Zest of one lemon (optional)

– 1 cup fresh or frozen blueberries

Instructions:

Step 1: Preheat the oven and prepare the muffin tin

Preheat your oven to 350°F (180°C). Grease a muffin tin or line it with silicone or paper liners. This recipe yields approximately 12 standard-sized muffins.

Step 2: Combine dry ingredients

In a large mixing bowl, whisk together the almond flour, granulated erythritol or other keto-friendly sweetener, baking powder, and salt.

Step 3: Mix wet ingredients

In a separate mixing bowl, combine the melted unsalted butter, unsweetened almond milk, large eggs, pure vanilla extract, and lemon zest if using. Whisk until well combined.

Step 4: Add wet ingredients to dry ingredients

Slowly pour the wet ingredient mixture into the bowl with the dry ingredients, stirring gently until just combined. Be cautious not to overmix the batter.

Step 5: Fold in blueberries

Gently fold in the fresh or frozen blueberries into the batter using a spatula. If you’re using frozen blueberries, avoid thawing them beforehand to prevent the batter from turning purple.

Step 6: Fill muffin tin

Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Optionally, you can sprinkle a few additional blueberries on top for appearance.

Step 7: Bake and cool

Bake the keto blueberry muffins in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
