Best Fruit Scones Recipe – How To Make Fruit Scones

Fruit scones are a delicious and wholesome treat that can be enjoyed at any time of the day. Whether for breakfast, afternoon tea, or a snack, these delightful pastries are easy to make and packed with bursts of fruity flavor. Here, we share a simple yet scrumptious fruit scone recipe that will leave your family and friends asking for more.

Ingredients:

– 500g (4 cups) self-raising flour

– 125g (1/2 cup) cold unsalted butter

– 100g (1/2 cup) granulated sugar

– 150g (1 cup) mixed dried fruit (e.g. raisins, currants, sultanas, and/or dried cranberries)

– 1 large egg

– 120ml (1/2 cup) whole milk

– A pinch of salt

– Flour for dusting

– Milk for brushing

Instructions:

1. Preheat your oven to 220°C (425°F) and line a baking tray with parchment paper.

2. In a large mixing bowl, sieve the self-raising flour and salt together to ensure there are no lumps.

3. Cut the cold butter into small cubes and add them to the flour mixture. Using your fingertips or a pastry cutter, rub the butter into the flour until the mixture resembles fine breadcrumbs.

4. Stir in the granulated sugar and mixed dried fruit until evenly distributed.

5. In a separate bowl or jug, lightly beat the large egg and mix it with the whole milk.

6. Make a well in the center of your dry ingredients and pour the egg-milk mixture in. Gently mix everything together until it forms soft dough – be careful not to over-mix as this could result in tough scones.

7. Turn out your dough onto a lightly floured surface and pat it down until about 2 cm (3/4 inch) thick. Fold the dough in half and pat it down again – this will create layers in your scones for a flakier texture.

8. With a round cutter (approximately 6 cm or 2.5 inches in diameter), cut out your scones and place them on the prepared baking tray. Bring together the remaining dough scraps, and repeat until all the dough is used.

9. Lightly brush the tops of your scones with milk to provide a lovely golden color when baked.

10. Bake your fruit scones in your preheated oven for 12-15 minutes, or until they have risen and turned a beautiful golden brown color.

11. Remove the scones from the oven and let them cool slightly on a wire rack before serving warm with lashings of butter, jam, or clotted cream – enjoy!
