Tips for the Best Vegan Apple Muffins:
- Use a mix of sweet and tart apples for the best flavor. Granny Smith and Honeycrisp make a great combination.
- Don’t overmix the batter to ensure tender muffins.
- For added texture and flavor, sprinkle some rolled oats or a cinnamon-sugar mixture on top of the muffins before baking.
- These muffins freeze well. Store them in an airtight container or freezer bag for up to 3 months.
