Best Breakfast Stuffed Portobellos Recipe – How To Make Breakfast Stuffed Portobellos

Introduction:

Breakfast is the most important meal of the day, and it’s essential to start your morning with a delicious and nutritious dish. Breakfast stuffed portobellos are an excellent meal option that provides you with a healthy, hearty, and flavorsome start to your day. This recipe combines tasty ingredients that not only delight your taste buds but also fuel you with much-needed energy.

Ingredients:

– 4 large portobello mushrooms

– 4 large eggs

– 1 cup cooked spinach, drained and chopped

– 1/2 cup shredded cheddar cheese

– 1/2 cup cooked bacon or sausage, crumbled (optional)

– 1/4 cup diced tomatoes

– 1/4 cup diced onions

– Salt and pepper, to taste

– Olive oil, for drizzling

Instructions:

1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil.

2. Carefully remove the stems from the portobello mushrooms. Scrape out the gills using a spoon until you have a well-like space inside each cap.

3. Drizzle olive oil over the mushrooms and place them face down onto the prepared baking sheet. Bake in the preheated oven for about 10 minutes or until they begin to soften.

4. Meanwhile, sauté the onions in a small pan for 3-5 minutes until they turn translucent.

5. In a separate bowl, mix together spinach, cooked sausage or bacon (if using), tomatoes, onions, salt, and pepper.

6. Remove mushrooms from the oven and flip them over, using tongs or a spatula so that their concave side is facing up.

7. Fill each mushroom cap equally with the spinach mixture.

8. Create a small well in the middle of the spinach mixture and crack an egg into that area, ensuring that the yolk remains intact.

9. Sprinkle shredded cheddar cheese on top of each stuffed mushroom.

10. Carefully return the baking sheet to the oven. Bake for about 15-20 minutes, or until the egg whites are cooked but the yolks are still slightly runny.

11. Remove from the oven and let them rest for a couple of minutes before serving. Season with additional salt and pepper if desired, and enjoy your delicious breakfast stuffed portobellos!
