Best Blueberry-Lemon Pie Bars Recipe – How to Make Blueberry-Lemon Pie Bars

If you’re a fan of fruity desserts, you’ll absolutely love the combination of blueberries and lemon in these delicious pie bars. They make the perfect treat for any occasion – be it a family gathering, potluck, or just an afternoon snack. Not only are they easy to make, but they also taste absolutely amazing. Here’s our Best Blueberry-Lemon Pie Bars Recipe.

Ingredients:

– 2 cups all-purpose flour

– 1/2 cup granulated sugar

– 1/2 teaspoon salt

– 1 cup unsalted butter, chilled and cubed

– 4 large eggs

– 1 1/2 cups granulated sugar

– 1 cup fresh lemon juice

– Zest of two lemons

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 3 cups fresh blueberries

Instructions:

1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper, leaving an overhang on two sides for easy removal.

2. In a medium bowl, whisk together the flour, sugar, and salt. Using a pastry cutter or your fingertips, cut in the chilled butter until you have small crumb-like pieces. Press this mixture firmly into the bottom of the prepared pan. Bake for 20 minutes, or until lightly golden.

3. While the crust bakes, prepare the filling. In a large bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until well combined.

4. Gently fold in fresh blueberries until evenly distributed.

5. Pour the filling over the baked crust and spread it evenly with a spatula.

6. Bake for an additional 35-40 minutes or until the filling is set and the edges are slightly golden brown.

7. Allow the bars to cool completely before attempting to remove them from the pan. Use the parchment paper overhang to lift the pie bars out of the pan and transfer them to a cutting board.

8. Using a sharp knife, cut into squares or rectangles. Store the Blueberry-Lemon Pie Bars in an airtight container in the refrigerator for up to one week.
