Fall is the prime time to enjoy all the best flavors that nature has to offer. With apples in season and holidays just around the corner, it’s time to bring together the delicious taste of apples, dates, and pecans in one delectable cake recipe. This Apple, Date & Pecan Cake combines all these scrumptious ingredients to create a show-stopping dessert perfect for any gathering.

Ingredients:

– 2 cups chopped, peeled apples

– 1 cup chopped dates

– 1 cup chopped pecans

– 2 cups all-purpose flour

– 1 cup granulated sugar

– 1 teaspoon baking soda

– 1 teaspoon ground cinnamon

– 1/2 teaspoon salt

– 1/2 cup vegetable oil

– 2 eggs, lightly beaten

– 1 teaspoon pure vanilla extract

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan. Set aside.

2. In a large mixing bowl, combine the chopped apples, dates, and pecans. Mix until well combined.

3. In another bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.

4. Gradually add the dry ingredients to the apple mixture and stir gently just until well incorporated.

5. In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract.

6. Pour the wet ingredients into the dry ingredients and mix well until you have a smooth batter.

7. Transfer the batter into the prepared baking pan and spread evenly using a spatula.

8. Bake for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.

9. Remove from oven and let cool on a wire rack for about 15 minutes before removing from the pan.

10. After the cake cools completely, you may choose to dust it with powdered sugar or drizzle the top with a simple glaze made from powdered sugar and milk or orange juice.

This Apple, Date & Pecan Cake recipe is not only moist and delicious, but it also boasts a beautiful blend of flavors and textures. The natural sweetness of apples, dates, and pecans makes this dessert the perfect addition to any holiday table or simply to enjoy with a warm cup of coffee or tea. Happy baking!
