Injera is a traditional Ethiopian flatbread that is made from teff, an ancient grain native to the region. It has a spongy texture and a slightly sour taste, serving as the perfect accompaniment to Ethiopian dishes. Here is a simple step-by-step guide on how to make injera at home.

1. Gather Ingredients and Tools

To make injera, you will need the following ingredients:

– 2 cups teff flour

– 3 cups water

– Salt, to taste

You will also need a large non-stick skillet or griddle and a ladle or measuring cup.

2. Mix the Batter

Combine the teff flour and water in a large bowl. Stir until smooth, making sure there are no lumps.

3. Ferment the Batter

Cover the bowl with a clean cloth and allow the batter to ferment at room temperature for 24-72 hours. This process will give injera its unique, slightly sour flavor.

4. Prepare the Skillet

Heat a large non-stick skillet or griddle over medium heat.

5. Stir and Season the Batter

After fermentation, you will notice that bubbles have formed in the batter. Stir it gently to mix in these bubbles, then add salt to taste.

6. Cook Injera

Using a ladle or measuring cup, pour about ⅓ cup of batter onto the heated skillet in a circular motion from the outside edge inward, creating a thin layer.

7. Cover and Cook

Cover the skillet with a lid, allowing steam to cook the top layer of injera while it’s still on the skillet. Cook for 2-3 minutes or until air bubbles appear on its surface and its edges begin to lift from the pan.

8. Remove Injera

Gently remove injera using a spatula and transfer it to a plate. Be careful not to tear it, as injera is delicate.

9. Serve and Enjoy

Place the cooked injera on a serving platter and let it cool. Continue making more injera using the remaining batter. Once finished, serve injera with your choice of Ethiopian dishes and enjoy its unique flavor.

With these nine easy steps, you can delight in a traditional Ethiopian meal made from scratch at home. Injera adds an authentic touch to any Ethiopian dish and boasts an unforgettable taste that is sure to leave an impression on your family and friends.
