3 Ways to Store Live Lobster

Lobsters are known for being a succulent and luxurious seafood that many enjoy. However, storing live lobsters can be a challenge for those who may not be familiar with the process. For the best taste and quality, it’s important to know how to properly store live lobsters. In this article, we will explore three different ways to store live lobster: using a cool environment, creating a moist environment, and utilizing a seawater tank.

1. Using a Cool Environment

Storing live lobsters in a cool environment is crucial for maintaining their freshness. The ideal temperature range for storing live lobsters is between 40-45ºF (4-7ºC). You can achieve this by using a refrigerator or cooler filled with ice packs at the bottom.

To store your lobster, follow these simple steps:

– Wrap each lobster individually in wet newspaper or damp cloth.

– Place them in the refrigerator or cooler with the wrapped side facing downwards.

– Make sure to keep them away from direct contact with ice or water as it can harm the lobsters.

– Check on them regularly to ensure they’re still alive and replace the wet newspaper or damp cloth if needed.

2. Creating a Moist Environment

Keeping live lobsters in a moist environment is crucial in preserving their vitality. The humidity must be maintained between 75-95%.

Here’s how you can create an appropriate moist environment:

– Fill a container with an inch of seawater or saltwater.

– Place an elevated, perforated platform on top of the water where lobsters can rest without being submerged.

– Put the lobsters on the platform, making sure they don’t sit on top of each other.

– Cover the container tightly with a lid or damp cloth, which will help maintain humidity and darkness.

– Store this container in your refrigerator or cooler.

3. Utilizing a Seawater Tank

Storing lobsters in a seawater tank is the most ideal method to keep them alive and fresh for an extended period. This method is commonly used in restaurants and seafood markets. However, it requires the right materials and knowledge.

To set up a seawater tank:

– Ensure the tank has proper circulation, aeration, and filtration to maintain high water quality.

– Use natural seawater or create artificial seawater by mixing sea salt with tap water.

– Maintain stable water temperature between 40-45ºF (4-7ºC) with the help of an aquarium chiller.

– Place a few inches of clean rubble at the bottom of the tank for lobsters to rest on.

– Add lobsters, ensuring there’s enough space for them to move around without being overcrowded.

Remember to not store lobsters with other aquatic animals, as they can be aggressive and may harm them.

In conclusion, properly storing live lobsters ensures they stay alive and maintain their quality until you’re ready to cook them. Whether you choose to store your lobster in a cool environment, moist environment, or a seawater tank, make sure to use appropriate methods and follow these tips for the best results.
