The popularity of veganism has surged in recent years, and with it comes a demand for delicious and creative plant-based alternatives to conventional dairy products. For cheese lovers, the thought of going dairy-free may seem daunting, but fear not! There are many ways to make satisfying vegan cheese at home that is not only delicious but also nutritious. In this article, we will explore 4 different methods for making vegan cheese so that you can enjoy your favorite dishes without compromising on taste.

1. Nut and Seed-Based Cheese:

One of the most popular methods for making vegan cheese is using nuts or seeds as a base. Soaking nuts like cashews, almonds, and macadamia nuts in water helps soften their texture, making them ideal for blending into a smooth and creamy consistency. Seeds such as sunflower and pumpkin seeds can also be used similarly, providing additional options for those with nut allergies.

To make nut or seed-based cheese:

– Soak your choice of nuts or seeds for 4-8 hours.

– Drain and rinse the soaked nuts or seeds.

– Blend them with water or plant-based milk along with seasonings like nutritional yeast, lemon juice, garlic, and salt until smooth.

– Optionally ferment the mixture using probiotics or a culture starter for a tangy flavor.

– Refrigerate until set.

2. Tofu-Based Cheese:

Tofu is another versatile base for making vegan cheese. This protein-rich soy product comes in various textures; firm tofu works well for developing sliceable cheeses, while silken tofu is perfect for making spreadable options.

To make tofu-based cheese:

– Press the tofu to remove excess moisture.

– Crumble or blend the tofu with flavorings like nutritional yeast, vinegar, miso paste, and herbs.

– Add agar powder or other thickeners if needed to achieve desired firmness.

– Pour the mixture into molds and refrigerate until firm.

3. Coconut Oil-Based Cheese:

Coconut oil-based cheeses mimic the texture and mouthfeel of traditional dairy cheese, as they are firm at room temperature but melt when heated. These cheeses work well for plant-based pizza, grilled cheese sandwiches, and more.

To make coconut oil-based cheese:

– Blend ingredients such as soaked cashews, coconut oil, lemon juice, tapioca starch, nutritional yeast, and seasonings until smooth.

– Heat the mixture in a saucepan until it becomes thick and stretchy.

– Pour it into a mold lined with parchment paper and refrigerate until firm.

4. Aquafaba-Based Cheese:

Aquafaba is the liquid from cooking chickpeas or leftover from canned chickpeas. Its unique properties make it an effective emulsifier and binder, which can be harnessed to create vegan cheese alternatives.

To make aquafaba-based cheese:

– Blend aquafaba with soaked nuts or seeds, nutritional yeast, apple cider vinegar, lemon juice, salt, and spices.

– Add agar powder or another gelling agent to help thicken the mixture.

– Heat it in a saucepan until it reaches a thick consistency, stirring continuously.

– Transfer the mixture into molds and refrigerate until set.

The prospect of making vegan cheese may seem intimidating at first glance; however, these methods demonstrate that you can create delicious plant-based alternatives using readily available ingredients. Experiment with different methods and flavors to find your perfect vegan cheese and take your dairy-free dishes to new heights!
