Best Brick Chicken Recipe – How To Make Brick Chicken

Introduction:

Brick chicken, a classic Italian dish, has made its way into the hearts and kitchens of food lovers worldwide. Known for its crispy skin, tender meat, and succulent flavors, brick chicken is a staple in many households. In this article, we will explore the best brick chicken recipe that will leave your taste buds wanting more.

Ingredients:

– 1 whole chicken (3-4 pounds), spatchcocked

– 2 tablespoons olive oil

– Salt and freshly ground black pepper to taste

– 2 cloves garlic, minced

– 1 tablespoon fresh rosemary leaves, finely chopped

– Zest of 1 lemon

– 1/4 cup dry white wine

– 1 large cast iron skillet or heavy frying pan

– 2 bricks wrapped in aluminum foil

Instructions:

1. Butterfly the chicken: Remove the backbone of the chicken by cutting along both sides of it with a pair of kitchen shears. Flatten the chicken by pressing down firmly on the breastbone until it cracks and spreads open.

2. Marinate the chicken: In a small bowl, mix together olive oil, salt and pepper, minced garlic, chopped rosemary, chopped thyme, lemon zest, and lemon juice. Rub the marinade all over the chicken, making sure to get it under the skin as well. Let the chicken marinate for at least 30 minutes or up to overnight in the refrigerator.

3. Preheat your grill or oven: If you’re using an outdoor grill, preheat it to medium heat (350°F). For oven cooking, preheat your oven to 400°F.

4. Put a grill-safe pan on the heat source if you use an outdoor grill to create a barrier between heat and chicken for more even cooking.

5. Cook the chicken: Place the marinated chicken skin-side down on the preheated grill or pan in the oven. Place the foil-wrapped bricks on top of the chicken, covering as much surface area as possible. Cook for about 25-30 minutes, or until the skin is golden brown and crispy.

6. Flip and continue cooking: Remove the bricks carefully and flip the chicken over. Replace the bricks and cook for another 20-25 minutes, or until an instant-read thermometer inserted into the thickest part of the thigh reads 165°F.

7. Let rest and serve: Once fully cooked, remove the chicken from the heat and let it rest for 5-10 minutes to allow the juices to redistribute before carving. Serve your delicious brick chicken hot with your favorite side dishes and enjoy!
