Best Chicken Scarpariello Recipe – How to Make Chicken Scarpariello

Chicken Scarpariello, also known as “shoemaker’s chicken”, is a flavorful Italian-American dish that boasts a magnificent combination of juicy chicken, spicy sausages, tangy peppers, and a richly flavored sauce. The dish gets its name because it is said to be so delicious that it would even tempt a shoemaker away from his work. With this simple and delectable recipe, you can bring the authentic taste of Chicken Scarpariello right into your home kitchen.

Ingredients:

– 4 bone-in, skin-on chicken thighs

– 4 bone-in, skin-on chicken drumsticks

– Salt and freshly ground black pepper

– 2 tablespoons olive oil

– 4 sweet Italian sausages (about 1 pound)

– 1 red bell pepper, cored, seeded, and sliced into thin strips

– 1 yellow bell pepper, cored, seeded, and sliced into thin strips

– 2 hot cherry peppers, cored, seeded and sliced into rounds (optional)

– 2 cloves garlic, minced

– ½ cup white wine (such as Pinot Grigio or Chardonnay)

– ¼ cup freshly squeezed lemon juice

– 1 tablespoon unsalted butter

– Freshly chopped parsley, for garnish

Instructions:

1. Season the chicken pieces generously with salt and freshly ground black pepper on both sides.

2. In a large skillet or Dutch oven over medium-high heat, add olive oil. Once the oil is hot, sear the chicken pieces skin side down for about 5 minutes or until they become golden brown. Turn the chicken over and cook for another 5 minutes on the other side. Remove the chicken from the pan and set aside.

3. In the same skillet or Dutch oven, brown the sausages over medium heat, turning them occasionally until cooked through. This should take approximately 10 minutes. Remove the sausages and set aside with the chicken.

4. Drain off any excess oil from the skillet, leaving behind around 2 tablespoons. Add the red and yellow bell peppers, hot cherry peppers (if using), and garlic to the pan, cooking for 3-4 minutes until softened. Be cautious not to burn the garlic during this step.

5. Carefully pour in the white wine, being sure to scrape off any browned bits that may have stuck to the pan’s surface. Allow the wine to simmer for about 2 minutes or until it has slightly reduced.

6. Return both the chicken and sausages to the skillet with their collected juices and stir well to combine with the sauce and vegetables.

7. Add in the lemon juice and continue to simmer for another 15-20 minutes, occasionally stirring to ensure that all ingredients are fully coated in sauce.

8. Once the chicken is thoroughly cooked and tender, turn off the heat and gently stir in butter until melted. The butter will help create a glossier texture for your dish.

9. Taste your Chicken Scarpariello for seasoning, adjusting salt and pepper as needed before transferring it onto a serving platter.

10. Finally, garnish with freshly chopped parsley and serve immediately with a side of crusty bread or pasta of your choice.
