Best Blueberry No-Churn Ice Cream Recipe – How To Make Blueberry No-Churn Ice Cream

Introduction:

Summer is here, which means it’s time to enjoy some cool, refreshing desserts! There’s nothing better than homemade ice cream, and with this no-churn blueberry ice cream recipe, it couldn’t be easier. Follow this simple, delicious blueberry ice cream recipe to make a delightful treat the whole family can enjoy.

Ingredients:

– 2 cups fresh or frozen blueberries

– 1/4 cup granulated sugar

– 1 tablespoon lemon juice

– 1 teaspoon vanilla extract

– 1 (14-ounce) can sweetened condensed milk

– 2 cups heavy whipping cream

Instructions:

Step 1: Prepare the blueberry mixture

Place the blueberries, sugar, and lemon juice in a medium-sized saucepan over medium heat. Stir and cook until the sugar dissolves and the blueberries release their juices—about 5-7 minutes. Remove from heat and let the mixture cool for 15 minutes. Then transfer it to a blender or food processor, add the vanilla extract, and blend until smooth. Pour the mixture into a bowl and place it in the refrigerator to chill for at least an hour.

Step 2: Mix sweetened condensed milk and heavy whipping cream

In a large bowl, combine the sweetened condensed milk and chilled blueberry mixture. Mix well with a rubber spatula until fully incorporated.

Next, pour the heavy whipping cream into another large bowl. Using an electric mixer fitted with a whisk attachment or a hand whisk, whip the cream on high speed until stiff peaks form—about 3-4 minutes.

Step 3: Fold whipped cream into the blueberry mixture

Carefully fold the whipped cream into the blueberry mixture using a rubber spatula. Ensure that all whipped cream is fully combined with the blueberry mixture without deflating the cream.

Step 4: Freeze the ice cream

Pour the ice cream mixture into a 9×5-inch loaf pan or a lidded container. Smooth the surface with a spatula, then cover with plastic wrap or a lid. Place in the freezer and freeze overnight or at least for 6 hours until the ice cream is firm.

Step 5: Serve and enjoy!

When ready to serve, allow the ice cream to sit at room temperature for a few minutes to soften slightly. Then scoop it into bowls or cones, garnish with extra blueberries if desired, and enjoy your homemade blueberry no-churn ice cream!
