3 Ways to Freeze Butternut Squash

Introduction

Butternut squash is a popular winter squash, known for its delicious and versatile sweet nutty flavor. It takes well to various cooking methods and can be used in a variety of dishes such as soups, casseroles, pies, and even salads. One challenge with butternut squash is that they have a limited shelf life, but thankfully you can freeze it for future use. Freezing not only preserves its freshness but also saves you time on meal prep during the colder months. Here, we explore three different ways to freeze butternut squash so that you can enjoy its delightful taste all year round.

Method 1: Freeze Raw Cubes

Step 1: Peel and Dice the Squash

Begin by peeling the outer skin using a vegetable peeler or sharp knife. Cut off the stem and slice the squash in half lengthwise. Remove the seeds and fibers using a spoon or ice cream scoop. Next, cut the squash into 1-inch cubes.

Step 2: Pre-Freeze on a Baking Sheet

Line a baking sheet with parchment paper and arrange the cubes in one layer, making sure they aren’t touching one another. This prevents them from clumping together when frozen. Place the baking sheet in the freezer for several hours or overnight until the butternut squash cubes are thoroughly frozen.

Step 3: Transfer to Freezer Bags

Once the cubes are frozen solid, remove them from the baking sheet and transfer them to freezer-safe bags or containers. Press out any excess air before sealing the bags tightly, and label them with the date. Store in your freezer for up to six months.

Method 2: Freeze Roasted Butternut Squash

Step 1: Prepare and Roast Squash

Preheat your oven to 400°F (200°C). Following Method 1’s slicing directions, peel, seed, and cube the squash. Toss the cubes in olive oil and season with salt and pepper. Spread them onto a baking sheet lined with parchment paper. Roast in the oven for approximately 20-30 minutes or until they are tender and slightly caramelized.

Step 2: Cool and Freeze

Allow the roasted squash to cool completely. Divide the cooled cubes into freezer-safe bags or containers in portion-sized amounts. Press out any excess air before sealing the bags tightly, and label them with the date. Store in your freezer for up to three months.

Method 3: Freeze Butternut Squash Puree

Step 1: Prepare Squash Puree

You can use boiled, steamed, or roasted butternut squash to make the puree. Once cooked, let it cool slightly then blend or mash to reach your desired consistency.

Step 2: Package Puree for Freezing

Divide the puree into portion-sized amounts using freezer-safe bags or containers. Leave at least a half-inch of space at the top to allow for expansion when frozen. Press out any excess air before sealing the bags tightly, and label them with the date.

Step 3: Freeze

Arrange the bags on a flat surface in your freezer so they freeze uniformly. The butternut squash puree can be stored in your freezer for up to six months.
